Salsa – Fresh & Delicious
Hold the phone people……..I have a recipe that you will want to make like right now.
Do you or someone you know love Salsa? I mean really really really love Salsa?
My recipe is the kind that you can’t stop eating….the kind you eat watching football…..the kind that the bowl is always emptied at your parties…that’s what I am talking about.
If you have ever been disappointed with some of the salsa you get at restaurants, or have given up on the store bought jars of salsa (I have)….then read on my friends because this is your answer.
Just thinking about salsa a person would think it pretty straightforward thing. But from all the variations and missteps I have witnessed first hand, it really seems to be a difficult task to get that right mix.
My thought is, there really should be Salsa Police……..because some of the stuff out there is really bad.
My whole point is, if you have a good blender or food processor, making salsa at home is a total snap. You can keep in the fridge for a couple of weeks but in my house it is gone well before two weeks and is absolutely worth every second of effort.
Here are the Players: Whole canned tomatoes or Fresh Tomatoes when available, Rotel (tomatoes and chilies), onion, fresh jalapeno, salt, sugar, garlic, and cilantro.
No Big Chucks of anything.
Tomatoes need to be turned in to a smooth consistency.
Let’s talk about the blender or food processor step……Very important to only pulse 2 or 3 times to get the right consistency of your tomatoes.
Onion, garlic, jalapeno pepper.
I know, I am really, really picky?
The juice from a fresh lime. Come on squeeze and squeeze. This is a good hand workout.
Add the salt….do a taste test after you stir. You may need to add more.
This is the consistency of the salsa.
- 3 Fresh Tomatoes or 1 - 16 oz. can of whole tomatoes
- 2 - cans Ro*Tel diced tomatoes & chilies
- 1 - onion
- 1 - Garlic clove
- 1/4 - Jalenpeno pepper
- Add sliced or canned tomatoes to blender or food processer
- Hit Pulse 2-3 times
- Add chopped onions
- Add chopped jalapeño
- Add ro*tel
- Add chopped garlic
- Add chopped cilantro
- Salt & Pepper
- Stir until mixed
- Taste test to see if additional salt is needed
- Store in refrigerator until ready to serve
