This is one of the easiest and tastiest soups you will make. Good enough to stand alone as a meal or add a vegetable if you desire. I searched, cooked, tasted and tried
bunches bowls of black bean soups across the country, well really around my local area within a 50 miles radius, but still I researched the black bean soup recipe, until I came up with this recipe that we like the best. Its simple but tasty. Healthy and filling. It will feed the hungriest of cowboys….and lumber jacks (which is my hubs). So give it try…..here’s what you do:
Drain 4 cans (15 oz.) black beans. Add to medium saucepan. Add water or broth. Add salt.
Chop two cloves of garlic. This is a must. Add lime juice.
Quick and Easy recipe with delicious healthy black beans. Great as a complete meal or add a side salad if desired.
- 4 cans (15/16 oz.) Black Beans (drained)
- 2 Cloves of Garlic - diced (must have)
- 2 - cans (15oz.) chicken broth or water
- 1 - Tbls. of fresh lime juice
- 3/4 tsp. salt
- 1 tsp. cumin
- 1 tsp. chili powder
- 1/2 tsp. black pepper
- Fresh Cilantro
- Sour Cream - 1/2 teaspoon per bowl
- Drain black beans.
- Add to medium sauce pan
- Add broth or water
- Add diced garlic
- Add salt, pepper, cumin, chili powder, lime juice
Once all ingrediants are added, bring to a simmer, reduce heat and cook for 20 minutes, stirring occassionally. Soup will thicken as it cooks. If you want a thinner soup just add a small amount of broth or water. Dip into serving bowls, add a teaspoon of sour cream and garnish with fresh cilantro.
