There is nothing quite like an easy blackberry pie recipe made with fresh summer berries straight from the garden.
This is my go-to every blackberry season here in the Midwest — simple enough for a weekday, impressive enough for company. No homemade crust required. I use Pillsbury pie dough and I’m not one bit sorry about it. The filling does all the work, and the result is bubbling, golden, and completely worth every minute.
If you’ve got fresh blackberries on hand, this is exactly what to do with them.
How to Make a Delicious Blackberry Pie: A Step-by-Step Guide
Blackberry pie is a delightful dessert that perfectly balances the tartness of fresh blackberries with a sweet, buttery crust. Whether you’re harvesting berries from your garden, picking them up from a local farmer’s market, or using frozen ones from the store, this recipe will guide you to a delicious pie. Here’s how to make it.
Ingredients
– 4 cups fresh blackberries (or frozen, thawed)
– 1 cup granulated sugar
– 2 store-bought pie crust
– 1/2 cup butter (1 stick), melted
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 1 teaspoon vanilla extract (optional)
– 1 tablespoon lemon juice
– 1 tablespoon cornstarch (if using frozen berries)

Step 1: Prepare Your Berries
When using fresh blackberries, gently rinse them under cold water and let them drain in a colander. If you’re using frozen berries, let them thaw and drain any excess liquid. Berries that are particularly juicy, toss them with a tablespoon of cornstarch to thicken the filling.
I wanted to make several recipes with my berries so I bought a flat, which is 8 quarts of berries.
Step 2: Preheat Your Oven
Preheat your oven to 350°F (175°C). This ensures that your pie will bake evenly and develop a beautiful golden crust.
Step 3: Prepare the Filling
In a mixing bowl, combine the blackberries with 1/2 cup of the granulated sugar and the lemon juice. Stir gently to coat the berries and let them sit for a few minutes while you prepare the pie crust.
Step 4: Assemble the Pie
Pour the melted butter into a 9×13-inch baking dish. Carefully unroll the store-bought pie crust and lay it over the melted butter. Spoon the blackberry mixture evenly over the crust. As the cobbler bakes, the crust will rise up around the fruit, creating a beautiful, rustic dessert.
Step 5: Bake the Pie
Bake the cobbler in the preheated oven for 45-55 minutes, or until the top is golden brown and a toothpick inserted into the center of the crust comes out clean. The filling should be bubbly and fragrant.
Step 6: Cool and Serve
Allow the cobbler to cool for at least 15 minutes before serving. This helps the filling set and makes it easier to scoop. Serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
Tips for the Perfect Blackberry Pie
– Choosing Berries: Fresh, ripe blackberries are ideal for this recipe. If they’re not in season, frozen berries work just as well. Just be sure to thaw and drain them to avoid excess liquid.
– Adjusting Sweetness: Taste your blackberries before using them. If they’re very tart, you might want to add a bit more sugar to the filling.
– Pie Variations: Feel free to experiment with adding other fruits like peaches, raspberries, or blueberries to the filling. A mixed berry cobbler can be a delightful twist on this classic dessert.
Making a blackberry pie is a simple yet rewarding process. Whether you’re a seasoned baker or a novice in the kitchen, this recipe is sure to impress your family and friends. Enjoy the sweet taste of summer with every bite!
